Hemp Caesar Dressing
YIELD: 2 CUPS
2 | egg yolks |
1 tbsp | Dijon mustard |
1 cup | hemp oil |
3 | small anchovy fillets |
1/2 cup | olive oil |
3 | cloves garlic, crushed into paste |
1 | Juice from 1 lemon |
2 tbsp | white balsamic vinegar |
1/3 cup | parmesan cheese, grated fine |
Salt and pepper to taste
- In a food processor, combine the egg yolks, Dijon mustard, vinegar, garlic, and anchovies. Blend until smooth.
- With the food processor on, slowly add the olive oil first, then the hemp oil.
- Once you achieve a smooth, thick consistency, add the cheese, lemon juice, salt, and pepper.
